Let's see if I remember all of them... I don't remember the actual names of most of the courses, so I'll use some generic ass name.

Not including general courses:

Visual Semiotics - learning the meanings behind symbols, colors and other means of portraying messages through visuals.
Intro to Mac - It's pretty much what you think plus an intro to Photoshop and Illustrator.
Advertising - learning how to design for a specific product and/or demographic.
Illustrator 1 - the basics of Illustrator
Illustrator Advanced
Printing - learn how printing works and learning how to use a large scale printer such as the ones used on printing houses.
Photo Editing - manipulating images with Photoshop. We mostly did plastic surgery kind of stuff.
Desktop Publishing - Use of InDesign and other software used for designing magazines, newspapers and other kinds of print.
Typography - learning how design fonts and the art of typography
Corporate Design - how to design for a corporation. Learning how to express someone else's idea. Logo/mascot design.
Human anatomy - study of human anatomy, human movements and character design.
Business Management 101 - learning how a business operates and learning the ropes of a freelance artist
